An Interview With Chris Lucas
Meet Chris Lucas: Founder and CEO of The Lucas Group, and one of Melbourne’s most iconic restaurateurs. His venues have conquered the Melbourne hospitality scene, with a solid repertoire including the city’s most popular restaurants: Kisumé, Chin Chin, Baby Pizza and newest additions Society, Lillian Terrace and Grill Americano.
With his newest venues already earning the title some of Melbourne’s hottest new eateries, The Lucas Group shows no signs of slowing down, and we are so excited to be a part of their journey as their official coffee partner!
From his humble beginnings in Geelong, Victoria, learning to cook and washing dishes at his family’s pub, Chris very quickly grew a passion for the culinary scene and the people involved, leading to his remarkable longevity and success in the hospitality scene.
We chatted to Chris about his success, culinary flair and of course.. coffee!
Your restaurants are iconic. They become 'must attend' and favourites instantly and continue to stand the test of time. What do you believe is the key to success here?
I always take risks with my venues and try something different, I find that if the idea is strong and well executed, Melbourne diners are more than up for a culinary challenge.
What made you choose St Remio coffee as a partner for many of your venues?
Our partnership with St Remio has been well established over the years. They supply quality coffee that is sustainably sourced, not to mention the great taste.
What is your go-to coffee and how many do you drink a day?
A macchiato. One first thing in the morning and sometimes a second at the office.
Finally, we are so excited about the recent opening of your new restaurant Grill Americano. Can you tell us about what guests can expect?
Grill Americano is a reimagining of the amazing grills and brasseries that we used to have here in Melbourne back in the ‘60s and ‘70s and early ‘80s. I wanted the bar culture of New York and to marry it with the beauty of a Venetian bar. It’s about reimaging the classics and adding a sense of modern sexiness.
